Hemmick's base is Keens mature cheddar sweet, creamy with a strong aftertaste. Tier two is Cornish Yarg a firm, slightly crumbly cheese wrapped in nettles to give its distinctive rind. Tier three is the strong but delicate Perl Las cream with lovely lingering blue overtunes. Tier four Gunstone, a semi hard goats cheese with a burnt orange rind and a firm, buttery texture, has a smooth and gently goatiness taste. Tier five Cornish Smuggler, a deep creamy flavour with a wonderful red marbling colour. Feeds approximately 160 guests
