The Spierings moved to a dairy farm near Lanreath from Holland. Giel having finished school decided to expand their hobby of making cheese into a business. Using the farm's milk he is making tradional Dutch Gouda in Cornwall.
Is aged for 5-6 months. It has a creamy smooth texture with a pleasant easy eating flavour. Past/NV
Aged for 18 months +. This cheese is much drier but has an incredibly rich flavour with very large crystals giving it an amazing crunch. Past/NV
Medium aged flavoured with Cumin seasoning.
Fenugreek Cornish Gouda is aged for 5-6 months. The cheese is creamy with a flavour reminiscent of walnuts, due to the fenugreek seeds.
