Made at Ditcheat Hill Farm near Shepton Mallet with the milk for each batch sourced from single farms. All types of milk are used and are all suitable for vegetarians.
A hard sheep cheese using pasteurised milk. It has a smooth, silky texture with a fresh and clean taste that ends in a mellow afterglow.
The cheese, coloured with annatto, has a smooth Caerphilly style texture with a full flavour, slightly nutty and with a sharp edge to its finish.
